Sadly we are no longer making our hummus for various reasons, including our refusal to compromise ingredients in order to extend shelf life, which seems to be a requirement of today's purchasing habits.... But in case you miss it so much, here is the recipe.... if you manage to make some, do send us snaps and we'll post them on our social media!
500g dried chick peas (soak overnight, strain and bring to boil in fresh water....skim off any scum that comes to surface during boiling. Boil for 2 hours, adding fresh water after one hour if necessary. Strain and reserve 400ml of cooking stock for use in recipe.)
170g light tahini
100ml lemon juice
80ml sunflower or olive oil
50g fresh peeled garlic
1.5 teaspoons fine sea salt
blend all ingredients together (including 400ml of cooking stock) until required consistency......
makes approx 1.8kg
